I play on PS4 and while everyone was enjoying the update my console didn’t think there was anything to update. I even started playing before I got a notification for a new update. So yea, it took a while for me.
I'm having the same issue. The update might not be deployed to all directories yet.
My No Man's Sky app is version 3.53, but there us no option to update in the Microsoft Store
I had to update through the Windows Store app. Once I started it there the progress continues in the xbox app
